Characteristics

  • The word Criollo translated from Spanish means local or indigenous. It is a variety that is cultivated very little - it makes up less than one per thousand of world production.
  • Unlike other varieties, it has a wide range of flavors, from fruity to spicy, and requires only a short fermentation time.
  • Cocoa trees are very delicate to grow, they are sensitive to diseases and pests. Low production and high price correspond to this.
  • The Criollo variety is particularly known for its delicacy and low yields.
  • This autochthonous (native) variety from Peru has a representation compared to the production of the worldwide production of other cocoa varieties, in the order of one percent of the world production.
  • It is uncultivated, without genetic modification, and in the case of proper cultivation without chemicals, it reaches incredibly delicate, sweet notes.
  • The beans of this variety are not as bitter (roasted or dried) and bitter (fresh) as the Forastero or Trinitario variety.
  • It fetches high prices on the market, therefore high quality is also expected from it and great demands are placed on it.
