Cocoa from unroasted beans, 150 g

Characteristics

• Cocoa powder with reduced fat content.
• Finely ground non-alkalized powder from unroasted Ecuadorian cocoa beans.
• The cacao tree comes from the Amazon, and archeological findings indicate that cacao was used in what is now Ecuador as early as 5,000 years ago.
• Although Africa now leads world production, Ecuador is increasingly the destination for gourmet chocolate producers.
• The local Arriba Nacional cacao stands out for its full, lightly spiced flavor and aroma with a lower bitterness. Our cocoa is bought directly from farmers in several regions, so its color and taste can vary slightly.

Use

• Unlike regular cocoa powder, the beans are not roasted, but after fermentation, drying and cleaning, they are crushed straight away and part of the cocoa butter is removed using a press. They are then ground into a fine powder.
• We use it in the same way as regular cocoa from roasted beans for cooking, baking and preparing hot drinks. It is also suitable for raw cuisine.

Raw vegan cocoa

• Pour 80 g of almonds with warm water and leave to stand overnight.
• In the morning, drain, rinse, add a few drops of virgin oil, pour 300 ml of warm water and mix thoroughly.
• Then strain through cheesecloth, add 3 teaspoons of unroasted cocoa, a pinch of sea salt, agave syrup to taste and whip.
