Sodium benzoate is the sodium salt of benzoic acid, which occurs naturally in fruits - cranberries, apricots, apples, as well as in mushrooms, cinnamon, cloves and some dairy products (as a result of bacterial fermentation) and teas.
It is mainly used as a component of the preservation system (also in the food industry), also permitted in natural cosmetics. It is one of the cheapest preservatives ever.
It has antimicrobial effects, prevents the multiplication of bacteria, but does not kill them.
It is also slightly antifungal, protects against fungi, molds and yeasts (in an acidic environment, i.e. pH 4.5 and below). It is therefore sensitive to the pH of the environment in which it is found. Depending on the pH, one of its properties is always preferred, so it can be considered an unstable but still functional substance.
It is not an allergen and can cause contact dermatitis only in very sensitive individuals.
Potassium sorbate is the potassium salt of sorbic acid. It is used in a synthetic form, very rarely we find it in a derivative natural form. It finds a place in cosmetic products as an alternative to parabens, it works as a preservative (allowed in natural cosmetics).
It has antifungal effects, thus preventing the growth of molds, yeasts and fungi, but it does not protect against bacteria, it stops the multiplication of microorganisms and extends the shelf life of the product. It does not belong to allergens and mild irritation has been noted only in extremely sensitive individuals.
